Today I made banana bread muffin tops. I have a special muffin pan for you only get the best part of the muffin the top. So I decided I would share with you all the recipe for my yummy muffins.
Ingredients:
-1 2/3 cups all purpose flour
-1 teaspoon baking soda
-1/4 teaspoon ground cinnamon
-1/2 teaspoon salt
-1 cup plus 2 tablespoons sugar
-2 eggs
-1/2 cup oil
-3 1/2 bananas, very ripe, mashed
-2 tablespoons creme fraiche or sour cream
-1 teaspoon vanilla extract
-2/3 cup walnuts, toasted and chopped
Now, I use sour cream mainly because I have no clue what creme fraiche is. I also do not like nuts in bread. So I did not add any, but I put it there for it others do like nuts.
Directions:
Set oven to 350 degrees F, Line bottom of a loaf pan with parchment paper.
Sift together the flour, baking soda, cinnamon, and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, sour cream, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.
Notes:
Now since I made muffin tops I did not use the loaf pan, instead I had to follow the cooking directions for the muffin top pan I have. Since it is only a top of a muffin it does not need to cook as long.
For my pan I do the following:
-apply a non-stick cooking spray, or grease the pan before adding batter.
-pour batter into greased pan about 1/2 to 3/4 full.
-Heat oven for 375 degrees F and bake for approx 10-12 minutes.
I thought I would let you guys know both the loaf directions and my muffin top directions. You may not have a muffin top pan but I am sure a regular muffin pan would not be much longer then that to cook.
